The third and final edition of the Red Ice Wine cask edition of Polaris is here. The journey using these exceptional barrels began in 2022 with the release of a single malt 9YO, soon followed by the award-winning Polaris 1.2 Single Pot Still at last year’s Irish Whiskey awards. So, to end the chapter of ice wine, a blend of 7YO malt and 6YO pot still; a perfect way to conclude the series before Two Stacks move on to the next exploration of the Polaris Collection.
Donal McLynn goes on to say.
‘’We originally wanted to release this incredible blend several months back. However, due to logistical issues with sourcing fresh casks, we had to prolong the wait, that said, the wait is certainly worth it. One of our first in house blends marks a special moment at Two Stacks new bond, and a fitting moment that it should arrive first in a Polaris Collection bottling’’.
A blend of approximately 110 litres of single malt with 105 litres of pot still where it was married together in a second fill Cab Franc Ice Wine barrel in December of 2022, before transferring it to a fresh fill ice wine cask in March of 2023. The result is a whiskey of deep complexity. The pot still spice is abundant throughout while the malt provides mouth coating texture and sweetness.
‘’ Given the success and accolades towards Polaris 1.2, it is always a fun challenge to try and go above and beyond what we achieved previously. However, it was also important to create something different and showcase the quality of the distillate in the blend. I think we have crafted another gem; we hope our fans will agree and enjoy this unique expression’’.
Each Polaris comes in a custom Two Stacks embroidered bag.
Nose: A captivating melody of sweet strawberry, red apple and all spice.
Palate: A velvet glove envelopes the tongue. Creamy bites of malty sweetness, cherries and strawberries, intertwined with a combination of cinnamon and clove we have come to love, marzipan finds its mark with bolder chilli notes towards the back.
Finish: A long lasting spice note dissipates to find finish like that of dark cacao, a dryness akin to that of well-made Italian espresso.
Every Polaris Collection bottling is hand number, waxed, and stamped.
Like all Two Stacks expressions, proudly presented free of added colouring and non-chill filtered.
